Mutton Fry / Mutton Chukka


Serving size - 4

Ingredients

mutton (goat meat) - 1/2 kg
oil - 6 tbsp
onions medium - 1 (small onions taste better)
tomato small - 1
ginger/garlic - 2 tsp
green chilli (chopped) - 2
garam masala - 1/4 tsp
turmeric powder - a pinch
cumin seeds - 2 tsp
pepper corn - 2 tsp
garlic pods - 6
chilli powder - 1/2 tsp
coriander powder - 1 tsp
cumin powder - 1/4 tsp
curry leaves - 6
coriander leaves
salt to taste

Preparation method
  1. Heat 5 tbsp oil.
  2. Add onions, curry leaves and saute until golden brown.
  3. Add 1/4 tsp garam masala, 1/4 cumin powder, turmeric powder and mix well.
  4. Add 2 tsp ginger/garlic paste. Saute for 1 minute.
  5. Add tomato, 2 green chilli chopped, salt. mix well.
  6. Add mutton. Saute for 3 mins.
  7. Pressure cook for 2 whistles.
  8. In a pan, add 1 tbsp oil.
  9. Grind 1 tsp cumin seeds, 2 tsp pepper corn, 6 garlic pods. Add and saute for 1 min
  10. Add 1/2 tsp chilli powder, 1 tsp coriander powder, 1/4 cumin powder and saute for 1 mins
  11. Add mutton from pressure cooker.
  12. Add curry leaves.

Chicken boneless fry


Ingredients

chicken
boneless - 1/4 kg
red chilli powder - 1 tbsp
coriander powder - 1/2 tsp
pepper powder - 1 tsp
lime juice - 1 tsp
ginger garlic paste - 1 tbsp
red color - 1 drop
salt to taste
oil
onion chopped
coriander leaves for garnish


Preparation method

  1. Mix chicken with red chilli powder, coriander powder, pepper powder, lime, ginger garlic paste, red color & salt and Marinate for 1 hour.
  2. Heat oil in a frying pan.
  3. Deep fry chicken in medium heat until tender.
  4. Garnish with onion, coriander leaves and lime.

Ghee Rice Recipe



Serving size : 2 persons

Ingredients:

basmati Rice - 1 cup
water - 2 cup
ghee - 6 tbsp
chopped onions - 1/4 cup
green chilli - 4 (cut slit into 1/2)
ginger garlic paste - 1 tsp
fennel seeds - 1 tsp
cloves - 2
cardamon - 2
cinnamon - 1"
bay leaves - 3
cashew nut - 5
raisins - 5
mint leaves
coriander leaves
salt to taste

Preparation Method:

  1. Soak the rice for minimum 10 minutes and drain the water.
  2. In a pan, add 2 tbsp of ghee and slightly fry the rice for 2-3 minutes and keep it aside
  3. In pressure cooker, pour 3 tbsp ghee.
  4. Add cloves, cardamon, cinnamon, fennel seeds & bay leaves and saute them for 1 minute.
  5. Add chopped onion and green chilli and saute until golden.
  6. Add ginger garlic paste and saute till raw smell goes.
  7. Add mint leaves and 1/2 coriander leaves. Saute
  8. Add rice,water & salt and mix well.
  9. keep for 1 whistle (rice should not overcook).
  10. After rice is done, In another pan add 1 tbsp ghee, cashewnut, raisin and fry them.
  11. Garnish the rice with fried cashewnut, raison and remaining coriander leaves.
